Oven Baked Salmon

Simplistic and delicious, takes a total of 25 mins to prep and cook and looks amazing on your table. Feeds 4 but can be adjusted to your needs.

 

Ingredients

1 Kilo Salmon fillets skin on or off
3-4 tbsp unsalted butter
2-3 tsp minced garlic or to taste
1 tbsp of onion powder
1 tbsp of paprika
1/2 - 1 tsp cayenne pepper
2-3 tbsp fresh parsley, basil
salt and pepper
Squeezes of lemon juice
lemon slices for garnish

    Instructions:

    Preheat oven to 200C, position rack in center of oven, line a baking sheet with baking paper and lightly spray with oil.

      Using a sharp knife, make about 4-5 slits on salmon, dab both sides dry with paper towels and season with salt and pepper on both sides.


      In a small pan over medium low heat, heat butter, minced garlic, paprika, onion powder, cayenne pepper and parsley of basil. Stir for about a minute until all are infused and let sit for 5 minutes. Add the lemon juice.

      Brush salmon with spice mixture, making sure every inch is covered with spice.

      Bake until cooked through, about 20 minutes , depending on the thickness of salmon fillets. Conway fillets are restaurant portioned to about 180 g to 200 g so baking is about 20 mins or so. When the thickest part of the salmon is easily flaked with a fork, the salmon is perfectly cooked.

      Garnish immediately with lemon slices on a bed or pureed sweet potato or salad.

        Blue Eye or Rockling with lemon and oregano.

        One our most popular pieces of fillets, both species of fish are moist, flakey and are very easy to cook in the oven or simply fry.

        Ingredients

        4 x 280 gram blue eye or Rockling fillets

        1 1/2 tbsp lemon juice

        1 tbsp olive oil

        2 tbsp fresh oregano leaves

        3 cloves garlic

        100g unsalted butter

        Instructions

        Heat the oil in a non - stick pan over medium- high heat. Sprinkle the fish with salt and pepper. Add the fish to the pan. Cook for 2 - 3 minutes on each side or until just cooked through, or easily flakes away with fork.

        Remove from the pan, cover with foil and set aside to keep warm.

        Pick ups from our warehouse is Sunday 24th December 2 PM at 11 Wingfield St, Footscray.

         We have extended our retail hours to include a 33 Hour seafood marathon shopping event. Open from Saturday 6AM 23rd December ALL DAY AND ALL NIGHT and not closing until 24th December 4 PM. Seafood stock have been assured. Plenty of prawns, oysters and crayfish.
