Ingredients:

500g fresh Australian prawns (peeled, deveined)

250g linguine or spaghetti

3 tbsp butter

3 tbsp olive oil

4 garlic cloves, minced

1 small red chili, finely chopped (optional)

Juice and zest of 1 lemon

½ cup white wine (or seafood stock)

½ cup cherry tomatoes, halved

¼ cup chopped parsley

¼ cup grated Parmesan (optional)

Salt & pepper to taste

Instructions:

Cook the pasta according to the package instructions until al dente. Drain and set aside.

Heat olive oil and butter in a large pan over medium heat. Add garlic and chili, sautéing until fragrant.

Add prawns, cooking for 2 minutes per side until pink and cooked through. Remove from the pan and set aside.

Deglaze the pan with white wine (or stock), scraping up any flavorful bits. Let it reduce for a minute.

Toss in the cherry tomatoes, lemon juice, and zest, cooking for another 2 minutes.

Return the prawns to the pan and add the cooked pasta. Toss everything together, ensuring the pasta is well coated.

Cut off time for orders is 12 Noon for next day delivery. Our last day for taking orders will be on the Wednesday 16th  April before 12 noon for last delivery on Thursday  17th March.

$75 minimum spend requirement for Click and Collect on line orders.
